We went to the fair, which is a favorite fall tradition around these parts. But let's face it, we're just there for the food.
And face it I did in an enormous sausage and peppers sandwich...and a waffle cone piled high with three scoops of ice cream. Then we saw some farm animals and took D on her very first carnival ride. It was the best.
Speaking of the best, I'm excited to bring you a recipe that is a STAPLE in our home, if not the foundation...breakfast potatoes. You can call them home fries too, but whatever you call them, they are mandatory on the weekends.
Now part of the problem with home fries, is that they take so stinkin' long to cook. Also, if i'm making them in the cast iron skillet, they need so much oil to crisp and not stick that I'm ready for a nap after eating an itty bitty serving. What's the solution? The AIR FRYER!
You know I love my air fryer and that I have a fleet of recipes using it, so this is just another recipe to make my case. It's really the best way to get potatoes cooked in a flash and in my family's faces quickly. I also like how the air fryer makes this dish a little healthier by using significantly less oil!
The potatoes take 15-20 minutes to fry and they come out perfectly brown and crispy, while turning nice and fluffy on the inside. Serve 'em up with eggs, fruit, bacon--or heck make them the whole meal! We're obsessed with these delicious little spuds and I know you will be too!
