I was having company and knew she loved chocolate. I had everything on hand. So yummy!
Oreo Cheesecake Brownies
For the brownie layer
2 1/2 cups granulated sugar
1 1/4 cups unsalted butter (2 1/2 sticks), cut into small pieces
1 3/4 cups unsweetened cocoa powder
1/2 teaspoon kosher salt
4 large eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
For the Oreo cheesecake layer
16 ounces cream cheese (2 blocks), softened
2/3 cups granulated sugar
2 tablespoons cornstarch
3 large eggs
3 tablespoons heavy whipping cream
2 tablespoons vanilla extract
16 ounces Oreo chocolate creme sandwich cookies (1 family-size package), broken into pieces
Make the brownie layer:
Preheat the oven to 325 degrees F and lightly mist a 9-inch by 13-inch baking pan with non-stick spray.
Melt butter. Add sugar, cocoa and salt. Stir until combined. Add the eggs, one at a time, stirring after each addition until completely incorporated. Stir in the flour and vanilla, and transfer the batter to the prepared pan.
Bake for 30 minutes. Cool slightly before topping with cheesecake mixture.
Make the Oreo cheesecake layer:
Preheat the oven to 350 degrees F.
Place the cream cheese, sugar, and cornstarch in a large mixing bowl, and beat on medium speed until creamy. Add the eggs, one at a time, scraping the bottom and sides of the bowl after each addition. Stir on low speed until completely incorporated. Stir in the cream and vanilla, and pour the mixture over the partially baked brownies.
Top with Oreos and bake for 15 minutes, then lower the oven temperature to 250 degrees F, and bake for an additional 35-40 minutes, or until the cheesecake is set around the edges and just barely jiggly towards the center.
Cool completely (or preferably, chill overnight) before cutting into bars.
