I was looking for a potato recipe with no soup in it.  Came upon this one and added the french fried onions.  We liked it!


No Soup Cheesy Hash Brown Casserole

1 26-30 ounce bag of frozen hash browns thawed
3 tbsp butter
1/2 cup sweet yellow onion diced small
2 cloves garlic minced
2 ½ Tbsp All-Purpose flour
1/2 cup chicken broth
1/2 cup whole milk
1 cup sour cream
1 1/2 cups shredded  Cheddar cheese
3 green onions sliced
Kosher salt and fresh ground pepper to taste
1 1/2 c french fried onions


Preheat the oven to 350°F.
Coat a 9 x 13 baking dish with butter or cooking spray.

In a medium stockpot, melt the butter over medium heat. Once melted add the diced onions and cook until softened.

Add the minced garlic and cook for 1 minute.

Add the flour and whisk for an additional 2-3 minutes.

While whisking, slowly add the broth and milk. Continue to whisk until thickened, about 6-8 minutes.
Season with salt and pepper, to taste. Remove from the heat.

Add the shredded potatoes to the saucepan with the sauce. Add the sour cream, cheese, and green onions.

Stir until well combined and pour into the prepared baking dish.  Top with french fried onions, if desired.
Bake for 1 hour or until bubbly and lightly golden.
