Recipe: Air Fryer Mamak Fried Chicken (Ayam Goreng Mamak)

Miss dining at the mamak? When I first made this crispy air fried chicken drumsticks, my son remarked that it tasted similar to the ones we used to have at the mamak.  To complete your mamak experience at home, serve the fried chicken with stir fried turmeric cabbage and fried egg. And maybe a cuppa of teh tarik too. YUM!

For the mamak fried chicken, I used Bestari crispy fried chicken coating mix, simply cos I have this at home. You can try this with any other fried chicken mix. Add 1 tablespoonful of curry powder to the wet batter mix for that extra oomph and elevate it from ordinary fried chicken to the desired mamak-style fried chicken. Don't forget to coat the marinated drumsticks with a layer of fried chicken mix again before adding it to the air fryer to cook. Crispy, crunchy, delicious.... good enough to rival your local mamak!

Mamak-style air fried chicken (Ayam goreng mamak)

Preparation time: 5 minutes
Cooking time: 30 minutes
Serves 4

Ingredients
4 chicken drumsticks, about 450g

For wet batter
3 tbsp Bestari crispy fried chicken coating mix
1 tbsp curry powder
80ml water


For dry coating
4-5 tbsp Bestari crispy fried chicken coating mix
Oil spray


1. In a mixing bowl, add the ingredients for the wet batter and mix well. Coat the drumsticks with the batter and then cover with cling film and place in fridge to marinate for at least 30 minutes.

2. Coat each drumstick with fried chicken coating mix and spritz generously with oil, about 3-4 times each side (*see tip below).

3. Cook in air fryer at 200C for 30 minutes, turning halfway through. 


Tip: Fill a bottle with 1/2 water and 1/2 cooking oil. Shake well before each use. 

Note: If deep frying, heat oil to 180C, then fry chicken pieces until golden brown or until internal temperature is 165F (74C).
